Whatever you want!!! that's one of the great things about canister filters. You want to stuff as much bio media in there as possible. Products such as ceramic noodles, foam stars, bio balls, even plastic pot scrubbies can be used. if you have a model with baskets you can buy whatever you want to put in there, even if it is meant for a different canister filter.
Another thing that i like to add to my aquarium is fine filter pads. You will be able to purchase large sheets of 50 or 100 micron filter pads to cut to fit. They work great, are reusable, and do not divert water flow around them (like filter floss often does), also they can be put in between baskets, which allows you to add more bio media.
Most manufacturers have their manuals up on the web, i'm sure you can find the manual if you hunt around for it. Also, if you are new to canister filters i recommend that you read about how to prime a canister filter.
